Orzo Salad- Katie's

Ingredients

  • 1 lb. orzo
  • 3 tbsps. fresh lemon juice
  • 1/2 cup olive oil
  • Salt & freshly-ground pepper, to taste
  • 1/2 cup pine nuts, toasted*
  • 1-1/4 cups feta cheese, crumbled (6 ozs.)
  • 1 cup thinly sliced scallions (green part only)

Preparation

Step 1

• Cook orzo in a large pot of boiling salted water until tender, then drain well.
• Whisk together the lemon juice, oil and salt and pepper to taste in a large bowl, then add hot orzo and toss.
• After orzo has cooled, toss with pine nuts, feta and scallions. Season with salt and pepper.
Makes 8 side-dish servings.
* Toast pine nuts in a shallow baking pan in a 350˚ oven until golden, about 5-10 minutes.
