- 1 Tablespoon dried oregano
- 1 Tablespoon dried thyme
- 1/4 cup olive oil
- Peppercorn Rosemary Rub:
- 1 Tablespoon smoked paprika
- 1 teaspoon Kosher salt
- 1 1/2 teaspoon ground black pepper
- 1 1/2 teaspoon cracked tellicherry peppercorns
- 1 teaspoon ground mustard
- 1 teaspoon ground rosemary
- 1/4 cup olive oil

Peppercorn Rosemary Rub: In a small bowl, combine ingredients. Rub onto turkey and let sit; refrigerated for 8 hours before cooking.
