Squash Casserole

Ingredients

  • 5 lbs yellow squash, sliced and peeled
  • 2 eggs, beaten
  • 1/2 c margarine
  • 1/4 c white sugar
  • 2 TB chopped onion
  • 1 c dry bread crumbs
  • salt & pepper

Preparation

Step 1

1. Preheat oven to 350 degrees.
2. In large saucepan over medium heat cover squash with water and cook until tender, 10 minutes. Drain & mash.
3. To the squash, add eggs, margarine, sugar, onions, salt and pepper. Mix well and transfer to a 2 quart casserole dish. Sprinkle bread crumbs on top.
4. Bake 20-25 minutes
