Ingredients
- 3 tablespoons fresh lemon juice, or to taste
- 1 1/4 cups water
- 10 cloves garlic, roughly chopped
- 1 jalapeno, stemmed and roughly chopped
- 2 cups fresh cilantro, minced
- 6 4-ounce cod filets
- kosher salt and freshly ground black pepper, to taste
- 1/4 cup extra virgin olive oil
- 6 ounce canned tomato paste
Preparation
Step 1
Prep: 1. Juice lemon. 2. Mince/chop: garlic, jalapeno, and cilantro.
Make: 1. Combine fish, juice, salt, and pepper in a bowl; set aside. 2. Heat oil in a skillet over medium-high heat. 3. Add garlic and jalapeno, and cook, stirring, until soft, 1-2 minutes. 4. Add tomato paste, and cook, stirring, until slightly caramelized, about 2 minutes. 5. Add cilantro and 1 1/4 cups water; and bring to a boil. 6. Reduce heat to medium; cook until sauce is slightly reduced, 6 minutes. 7. Add fish, skin side up (if it has skin), with its juice and cover. Reduce heat to a simmer. Cook until fish is done, 15-20 minutes.
