Pork Tenderloin

Ingredients

  • 3/4 lb pork tenderloin
  • Salt and pepper
  • Flour
  • 1 beaten egg
  • Oil
  • 2 cloves garlic
  • 1/4 c vinegar
  • 1/4 c water
  • 1/3 c sugar
  • 1 tsp soy sauce
  • 1/4 tsp pepper
  • 1 1/2 tsp corntarch
  • 2 Tbsp water
  • 1 dill pickle

Preparation

Step 1

Heat i" oil in frying pan over med heat
Cut the meat into medallions
Toss in flour salt and pepper
Dip each piece into beaten egg and then drop in hot fat
Continue frying about 10 min turning the pieces until each is golden brown
Remove from fat and drain on paper towel
Pour the fat from the pan leaving about 1 tbsp
Fry the garlic cloves, split in half for 1 min
Take pan from the heat and add vinegar,sugar,soy sauce, pepper and water
Blend in the cornstarch mixture
Add the diced dill and the meat
Turn the heat to low and cook only until the mixture thickens
Good served over a bed of rice
