Turkey Pot Pie (or Chicken)

Makes 2 deep dish pies. Freezes well.

Ingredients

  • 1 cup diced onions
  • 2 cups cubed potatoes
  • 2 cups diced ccarrots
  • 1 1/2 cups chopped celery
  • 3 cups chicken broth
  • 5 cups cubed turkey
  • 2/3 cup butter
  • 2/3 cup flour
  • 2 cups milk
  • salt and pepper to taste

Preparation

Step 1

Bring broth, onions, potatoes, carrots and celery to boil. Cover and simmer for 10-15 min. Drain vegetables, saving the broth. In medium saucepan, over medium heat, stir flour into hot melted butter until blended. Gradually stir in milk, broth, salt and pepper. Cook, stirring constantly, just to boiling. Pour over vegetables. Stir in turkey. (add peas if desired). Pour mixture into deep dish pie plates. Fit pie crust loosely over turkey mixture. Mix egg yoke with 1 tsp water. Brush on crust. Flute edges, and make slits in the top crust to let out steam.
Bake at 400* for 40 min.
