Arugula chimichurri

Ingredients

  • 2 c packed arugula
  • 1 c flat leaf parsley
  • 1 tsp red pepper flakes
  • 1/2 c evoo
  • 1/3 c red wine vinegar
  • 3 cloves garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

1) pulse arugula and parsley in processor til finely chopped

2) transfer to bowl, whisk in red pepper, evoo, vinegar, garlic, salt and pepper. cover with plastic and let stand at room temp for about 1 hour before serving over steak
