Warm Dijon Potato Salad

Ingredients

  • 2 pounds small red potatoes, quartered
  • 1 bunch green onions, chopped
  • 4 tablespoons sherry vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon salt

Preparation

Step 1

Cook potatoes with water to cover, in saucepan for 20 minutes or until tender. Drain.

Combine remaining ingredients in a bowl. Add potatoes; toss. Serve warm.
