Ingredients
- 2 pounds red skin potatoes
- 6 cloves garlic
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
Preparation
Step 1
Cut potatoes into 1-inch chunks and place in large, heavy oven proof baking dish.
Place garlic cloves in small food processor work bowl; chop fine. Add olive oil and spices to work bowl and mix. Toss mixture with potatoes so all are coated with the spices and oil and garlic.
Bake in 350°F oven for one hour, tossing after 30 minutes.
