Ingredients
- 2 1/2 pounds red potatoes
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper
- 2-3 sprigs rosemary, leaves stripped and chopped
Preparation
Step 1
Preheat oven to 350°F. Cut potatoes into 1-inch pieces. Place potatoes in large sauté pan with olive oil and remaining ingredients; toss to coat.
Roast potatoes for one hour or until fork tender and golden brown, stirring after 30 minutes.
