Spaghetti Squash Casserole

Ingredients

  • 1 Spaghetti squash
  • 1 Orange pepper, diced
  • 1 Zucchini, diced
  • 1 Onion, diced
  • 2-3 garlic cloves, minced
  • 1/3 cup seasoned breadcrumbs
  • 1 can crushed tomatoes

Preparation

Step 1

Baking Squash: Pierce the shell several times with a fork, then place in a baking pan. Bake in a 350°F oven until the squash gives when squeezed (use a potholder). Cooking time: one hour to one hour 45 minutes.
While that is cooking spray a frying pan with nonstick spray and sauté all the fresh veggies for 15 minutes. Then, add can of tomatoes for 5 minutes longer. Take squash out of oven and slice it length wise in half. Scoop out seeds from the inside. Take out spaghetti like squash and put in a casserole dish (9 X 13 inch). Pour the veggie mixture over top of it and sprinkle 1/3 cup of seasoned breadcrumbs on top and bake at 350 degrees for 20 minutes covered, and 20 minutes uncovered.
