SHRIMP SALAD

Ingredients

  • 7-1/2 cups water
  • 1-1/2 teaspoons salt, divided
  • 2 pounds shrimp
  • 1-1/2 cups long-grain rice, uncooked
  • 1 small onion, finely chopped
  • 1 small green pepper, finely chopped
  • 1 cup chopped cauliflower
  • 3 ounce jar pimento-stuffed olives, drained and chopped
  • 1 cup mayonnaise or salad dressing
  • 1/2 teaspoon fresh ground pepper
  • Lettuce leaves

Preparation

Step 1

Bring water and 1 teaspoon salt to a boil; add shrimp; and cook 3 to 5 minutes or until shrimp turn pink. Drain well; rinse with cold water. Peel, devein, and chop shrimp; then set aside.

Cook rice according to package directions. Combine rice, shrimp, remaining 1/2 teaspoon salt, onion, and next 5 ingredients; cover and chill.

Serve in lettuce-lined bowl with crackers.
