Indian Green Beans and Potatoes - Aloo Beans

Ingredients

  • 1/2 lb french green beans
  • 3 potatoes, diced
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1/2 tsp garam masala powder
  • 1 tsp amchoor (dry mango powder), or according to taste
  • 2-3 Tbsp oil or ghee butter
  • salt to taste

Preparation

Step 1

1. Clean and cut the green beans and potatoes. In a thick bottomed pan, add the oil. When the oil is hot add the potatoes and sauté for 3-4 minutes.

2. Add the beans and continue to sauté both vegetables for 8-10 minutes, over low heat.

3. Add the turmeric powder, chili powder and salt. Continue to cook the beans and potatoes for another 8-10 minutes, or until they are soft. Add the garam masala and the amchoor, and stir well.

Serve the Aloo beans with rotis and curd.
