Garden Pasta

Ingredients

  • 2 tablespoons margarine
  • 1 medium zucchini, sliced
  • 1 medium red pepper, cut in thin strips
  • 1 medium green pepper, cut in thin strips
  • 1/2 cup sliced green onions
  • 2 cloves garlic, minced
  • 1/2 cup chopped parsley
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ground pepper to taste
  • 3/4 cup sour cream
  • 1/4 cup milk
  • 8 ounces egg noodles, cooked and drained
  • 3/4 cup grated Parmesan cheese

Preparation

Step 1

In large skillet, heat margarine over medium heat. Add vegetables and garlic; saute 5 minutes until tender-crisp. Add spices. Reduce heat to low. Stir in sour cream and milk; simmer 5 minutes (do NOT boil). Add noodles. Stirring constantly, cook 1 minute. Add cheese; toss to coat well.
