Ingredients
- 4 ounces uncooked orzo (rice-shaped pasta)
- 1/2 medium onion
- 1 tablespoon olive oil
- 12 ounces large, unpeeled shrimp (thawed if frozen)
- 1 teaspoon Italian seasoning
- 2 tablespoons grated Parmesan cheese
Preparation
Step 1
Prepare orzo according to package directions. Peel and finely chop onion. Heat oil in a large skillet over medium-high heat. Saute onion until tender, about 3 minutes. Add shrimp and Italian seasoning. Saute until pink, 2 to 3 minutes. Drain orzo and return to pot. Toss with shrimp and onions. Sprinkle with Parmesan before serving. Peel shrimp as you eat it.
