Ingredients
- 1 egg
- 2/3 cup beer
- 1-1/2 tsp baking powder
- 3/4 cup flour, divided
- 2 cups flaked coconut
- 1 lb. (24-30 ct.) large shrimp, peeled & deveined
- 3 TB or more canola oil
Preparation
Step 1
In a medium bowl, whisk together egg, beer, baking powder, & 1/2 cup flour. Place remaining 1/4 cup flour in a shallow dish. Place coconut in a separate shallow dish. Dredge shrimp in flour, shaking off excess. Coat shrimp in beer mixture. Roll shrimp in coconut until all sides are coated. Heat oil in a large skillet over medium-high heat. Add shrimp in batches, cooking 2 minutes per side. Serve with rice pilaf or fried rice.
