Black Bean Burgers - Vegan

Recipe makes 5 burger patties.

Ingredients

  • 1/2 cup whole wheat flour
  • 1 small onion, peeled and diced
  • 2 garlic cloves, minced
  • 1/2 tsp dried oregano
  • 1 small hot pepper, seeded and minced
  • 2 Tbsp olive oil
  • 1/2 medium red pepper, seeded and diced
  • 15 oz black beans,* You can use canned black beans, just rinse and drain
  • 1/2 corn niblets
  • 1/2 cup bread crumbs
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • 2 tsp chili powder
  • 2 Tbsp fresh parley, finely chopped
  • Toasted Buns and Condiments

Preparation

Step 1

1. Pour the flour onto a plate and set aside
2. Sautee onion, garlic, oregano, and hot pepper with 1 Tbsp oil over medium heat.
3. When onions are translucent, add the red pepper to pan and sautee another 2 minutes.
4. In a medium bowl, mash 1/2 of the black beans until they are thick and pasty. Leave the other 1/2 of the black beans whole.
5. Add sautéed vegetables, corn, bread crumbs, cumin, salt, chili powder and parsley to the beans and combine until well mixed.
6. Divide into 5 large patties.
7. Dredge the patties in the flour and coat evenly.
8. Coat the pan with remaining 1 Tbsp olive oil and fry the patties over a medium-high heat, until browned on both sides.
