Ingredients
- 2 lbs potatoes1 c chopped onion
- 3 T minced parsley
- (2 T whole wheat flour)
- (1/2 t garlic powder)
- (2 T water)
- (2 T butter)
- (2 T butter)
- 16 oz sliced mushrooms
- 1 med onion, sliced thinly
- (2 T soy sauce)
- (Salt/pepper)
- Lg bunch of broccoli
- Dinner rolls
Preparation
Step 1
Preheat oven to 350o F. To cook potatoes: Place
potatoes in a pot. Cover with water. Bring to a boil.
Reduce heat; cover and cook until soft or knife
tender. Drain and cube potatoes. Save 1 ½ c diced
potatoes for Meal 6. Place potatoes, onion,
parsley, flour, garlic powder and water into food
processor and blend until mixed. Form mixture into
patties. Roll patties in flour. Place on shallow baking
dish. Butter the tops of the patties w/2 T butter.
Bake for 15 min or until golden brown.
Melt butter in a skillet. Add mushrooms, onions,
soy sauce, salt and pepper. Stir-fry until
mushrooms and onions are tender. Serve on top of
patties.
Steam broccoli, heat rolls and serve on the side.
