Pepperoni Pasta Salad

Ingredients

  • 1 pkg rainbow pasta swirls
  • 1 large tomato, diced
  • Slices of pepperoni
  • 1/2 cup pimento stuffed green olives, sliced
  • 1 green bell pepper, chopped
  • 1 cup frozen green peas
  • 1/2 cup cheddar cheese, cubed
  • 3 tbs olive oil
  • 1 tb wine vinegar
  • 2 tbs fresh parsley, chopped
  • 1 tsp garlic powder
  • 3/4 tsp oregano leaves
  • 1/4 tsp black pepper

Preparation

Step 1

Salad:

Cook pasta according to package until tender. Drain in colander and rinse with cold water.

In large bowl, combine drained pasta with chopped vegetables and pepperoni slices to your taste.

In a separate bowl, combine oil, vinegar, and seasonings and pour over pasta and veggies. Chill until ready to eat.

Stir in cubed cheese just before serving.
