Lemon Cookies

Soft and chewy with the perfect hint of Lemon

Ingredients

  • 1 C. butter, softened
  • 1 1/2 c. sugar
  • 1 egg
  • 1 tsp. lemon juice
  • 1 Tbsp. lemon zest
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 tsp. baking pwd.
  • 2 1/4 c. flour
  • LEMON GLAZE
  • 1 1/2 c. powder sugar
  • 1 tbsp. lemon juice
  • 1 tbsp. lemon zest
  • 1 tbsp. milk
  • 1/4 tsp. vanilla

Preparation

Step 1

Preheat oven to 350 degrees
Cream butter and sugar together
Add egg and beat well.
Add lemon juice, lemon zest and vanilla and mix well.
Add salt, baking powder and flour and mix until incorporated
Roll cookies into 1 inch balls and place 2 inches apart on greased cookie sheet. Bake for 8-10 min. or until lightly golden on edges.

Combine glaze ingred. and whisk until smooth. Drizzle as much as desired over slightly warm cookies and cool completely
