Cucumber Salad

Ingredients

  • 3 cucumbers, peeled and thinly sliced
  • 1 Tbs. salt
  • 3 Tbs. minced onion
  • 1 1/2 cups sour cream
  • 1 1/2 teaspoons sugar
  • black pepper
  • 1/2 cup chopped pickled cherry peppers or seeded tomatoes

Preparation

Step 1

Toss cucumbers with salt in a bowl.
Chill 1 hour, then drain and pat dry.
Meanwhile, soak minced onion in cold water 15 minutes; drain.
Mix sour cream and sugar in a large bowl, then stir in the cucumbers, onion, some black pepper chopped pickled cherry peppers or chopped tomatoes.
