Ingredients
- 8 oz. sausage
- 1 cup diced onion
- 1 medium green bell pepper, chopped
- 1 jalapeno pepper, chopped
- 6 large eggs, beaten
- 3/4 cup biscuit baking mix
- 2/3 cup buttermilk
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 cup shredded Mexican cheese blend
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
- Chopped tomato (optional)
Preparation
Step 1
1. Preheat oven to 350. Coat 11 x 7 inch baking pan or 9 inch deep dish pie pan with nonstick cooking spray, set aside.
2. Heat medium oven proof nonstick skillet over medium heat until hot. Add sausage; cook and stir 4 minutes or until browned, breaking up large pieces. Add onion, bell pepper an jalapeno; cook and stir 6 minutes or until crisp-tender. Transfer to prepared baking pan.
3. Combine eggs, biscuit mix, buttermilk, salt and black pepper in medium bowl; mix well. Pour over sausage mixture in baking pan.
4. Bake, uncovered, 30 minutes or until knife inserted in center comes out clean. Remove from oven. Sprinkle evenly with cheese and cilantro. Let stand 10 minutes before serving with sour cream and tomato, if desired.
