Ingredients
- 1/2 pd boneless top round or flank steak, trimmed
- 10 dried tomato slices or halves (packed without oil)
- 3/4 c boiling water
- 2 t cornstarch
- 1/4 c soy sauce
- 1 1/2 t sugar
- 2 c fresh broccoli
- 3 green onions
- 1 clove garlic
- hot, cooked rice
Preparation
Step 1
Slice steak diagonally across the grain into very thin slices
Combine tomato slices and boiling water; let stand 5 min. Drain and slice tomato into thin strips, reserving liquid. Combine cornstarch, soy sauce, sugar, and reserved liquid, stirring until smooth. Set aside.
Coat a lg nonstick skillet with cooking spray; place over medium high heat until hot. Add steak, and cook, stirring constantly, 3 min. Remove from skillet and set aside. Add tomato strips, broccoli, green onions, and garlic. Cook, stirring constantly, 3 min. Add cornstarch mixture and steak, and cook, stirring constantly, 1 min. Serve over rice. makes 2 servings....
