Gingered Sweet Potatoes

Ingredients

  • 4 sweet potatoes
  • 1/3 cup fresh orange juice
  • 1 1/2 tablespoons grated peeled fresh ginger
  • 1 teaspoon grated orange rind
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Preparation

Step 1

Pierce sweet potatoes with a fork. Microwave at HIGH 10 to 12 minutes or until tender, turning over halfway through. Peel, cut into large chunks, and process in a food processor with orange juice, ginger, and orange rind until smooth. Stir in salt and pepper
