Tuna Tartare

Ingredients

  • 1 lb fresh ahi tuna (sushi grade)
  • 1 tsp salt
  • 2 tb fresh chives, minced
  • 1/2 tsp fresh ground black pepper
  • 1 tb fresh lemon juice
  • 2 tsp olive oil

Preparation

Step 1

Grind tuna in medium to fine grinder. Combine all ingredients in a stainless steel bowl. Use 2 tablespoons to make shape. Serve with croutons or crackers.

* Serve with Fumé Blanc
* Do not make too far in advance
