Ingredients
- 3-4 medium yellow summer squash, sliced (about 5 cups)
- 1 pkg (8 oz) shredded cheddar or Colby-Jack cheese, divided use
- 1/2 medium onion, chopped
- 1 can (4 oz) chopped green chilies
- 2 tbsp all-purpose flour
- 1/4 tsp salt
- 1/3 cup salsa
- 2 green onions, sliced
- 2 tbsp chopped red onion
Preparation
Step 1
Preheat oven to 400 degrees. In a large bowl, combine squash, 1/4 cup cheese, onion, and chilies. Sprinkle with flour and salt; toss to combine.
Transfer to a greased 8x8-inch baking dish. Bake, covered, 30-40 minutes or until squash is tender.
Spoon salsa over top; sprinkle with remaining 3/4 cup cheese. Bake, uncovered, 10-15 minutes longer or until golden brown. Let stand 10 minutes. Top with green and red onion before serving.
