Chicken (or Veal) Marsala

Ingredients

  • Seasoned bread crumbs
  • 2 - 3 eggs
  • 1/4 lb. margarine
  • juice of 2 lemons
  • 3 cloves garlic, crushed
  • parsley flakes
  • salt
  • pepper
  • 1 1/2 cups Marsala wine
  • 2 1/2 lbs. chicken, (or veal), skinless & boneless

Preparation

Step 1

Bread chicken with eggs and seasoned bread crumbs. Brown in olive oil; drain on paper toweling. Melt margarine. Add juice of lemons, crushed garlic, parsley flakes, salt, pepper, and wine. Pour over chicken (or veal) in glass baking dish & marinate for an hour or more. Bake at 350* for 30 minutes.
