Chocolate Cups w/ Berry Centres

Ingredients

  • 2 Tbsp. Blueberries
  • 2 Tbsp. Raspberries
  • 2 Tbsp. Blackberries
  • 2 Tbsp. Strawberries
  • 1/4 C. Sugar
  • 1/4 C. 35% Cream
  • 6 oz. 72% Dark Chocolate
  • Fresh Mint Sprigs

Preparation

Step 1

Puree the berries in a mixer. Pour into ice cube trays & reserve for 1 hr. in the freezer. Separate the cream into two equal parts. Melt the chocolate in a double boiler. Slowly pour in one part of the cream while mixing quickly to avoid forming crystals. Whip the second part of the cream while ensuring it doesn't become too firm & softly incorporate into the melted chocolate. Half-fill four dessert cups with the chocolate. Place a fruit cube in the centre of each cup & cover with the rest of the mousse. Garnish each portion with afew mint sprigs.
