Orange Muffins

Ingredients

  • 3 Cups Sifted Cake Flour
  • 2 Tbs. Baking Powder
  • 1/4 tsp. Salt
  • 3/4 Cup Margarine or Butter
  • 1/2 Cup Sugar
  • 3 Eggs
  • 1 Tbs. Grated Orange Rind
  • 1/4 Cup Orange Juice
  • 3/4 Cup Milk

Preparation

Step 1

Sift flour, measure, sift again with baking powder and salt. Cream margarine. Add sugar, gradually and cream together until light and fluffy. Add eggs and beat well. Blend in orange juice and grated orange peel. Add dry ingredients alternately with milk. Be careful not to over-mix. Fill greased muffin tins 2/3 full. Bake at 400 degrees for 20 minutes.
