Fresh Tomatoes, Basil, and Feta Sandwiches

Ingredients

  • 1/3 cup fresh ( preferably home-grown ) tomatoes,
  • coarsely chopped
  • 1 teaspoon fresh basil leaves, chopped
  • ( or oregano, or Italian parsley )
  • 1 teaspoon olive oil
  • 1 Tablespoon crumbled Feta cheese
  • sliced whole-grain bread

Preparation

Step 1

Combine the tomatoes, basil, olive oil, and Feta cheese. Use as a sandwich topping on slices of whole-grain bread. Pita bread may be used as well.
