Ingredients
- 3 pounds chicken breasts (with skin and bones)
- 1 1/3 cups water
- 2 10 3/4 ounce can condensed cream of chicken soup
- 1 cup mayonnaise or salad dressing
- 1 cup shredded cheddar cheese (4 ounces)
- 1 teaspoon lemon juice
- 1/2 teaspoon curry powder
- 1/8 teaspoon pepper
- 2 16 ounce package frozen broccoli cuts, thawed and drained
- 1 tablespoon butter or margarine, melted
- 1 1/4 cups soft bread crumbs
Preparation
Step 1
Place chicken in a large skillet with the water. Bring to boiling; reduce heat. Cover and simmer 18 to 20 minutes or until chicken is tender and no longer pink.
Drain chicken; cool and cut into cubes, discarding skin and bones.
For sauce, combine soup, mayonnaise, 1/4 cup of the bread crumbs, half of the cheese, the lemon juice, curry powder, and pepper.
Combine broccoli, chicken, and half of the sauce. Turn mixture into a 13x9x2-inch baking dish. Spread with remaining sauce.
Combine the remaining cheese and bread crumbs and the melted butter; sprinkle over sauce.
Bake, uncovered, in a 350 degree F oven for 25 to 30 minutes or until heated through.
