Ingredients

  • 1 cup Panko breadcrumbs
  • 1/3 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 2 tablespoons extra-virgin olive oil, plus more for drizzling
  • 1/2 teaspoon grated lemon zest, optional
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 4 (6-ounce) halibut fillets or any flaky white fish

Preparation

Step 1

Preheat oven to 400°F. Line a baking sheet with foil.

In a shallow dish, combine breadcrumbs, parsley, dill, chives, olive oil, lemon zest, salt, and black pepper.

Rinse halibut and pat dry with a paper towel. Drizzle both sides of fish with olive oil. Dredge lightly in breadcrumb mixture and place on baking sheet. Generously spoon the remaining herbed bread crumbs over the fish, pressing lightly onto each fillet.

Bake until lightly browned, about 15 to 20 minutes.
