Zucchini Carrot Cake

Ingredients

  • Frosting:
  • 2 eggs
  • 1 c sugar
  • 2/3 c oil
  • 1 1/4 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 c carrot, grated
  • 1 c zucchini, grated
  • 1/2 c nuts
  • 3 oz cream cheese
  • 3 Tbsp margarine
  • 1 tsp vanilla
  • 2 c powdered sugar

Preparation

Step 1

Beat eggs and sugar.

Add oil and then dry ingredients.

Beat for 4 minutes.

Stir in carrots and zucchini and nuts.

Bake at 350 degrees for 35 minutes.

Cool and frost.
