Ingredients
- 2 Cups Milk
- 1 Cup Sugar
- 2 Tbs. Cornstarch
- 1 Cup Coconut, finely shredded
- 1/4 tsp. Salt
- 3 Tbs. Butter or Margarine
- 1 tsp. Coconut Flavoring
- 2 Egg Yolks (save whites for meringue)
Preparation
Step 1
Heat milk. Mix sugar, cornstarch, coconut, salt, butter and egg yolks. Add to heated milk, stirring constantly. Pour into 1 unbaked pie crust and bake until nearly done. Put meringue on top and sprinkle with coconut, then put back into the oven until meringue is a nice golden brown.
