Skillet Cornbread

Ingredients

• 4 T butter
• 2 C yellow cornmeal
• 1 T sugar
• 1 tsp baking soda
• 1 1/2 tsp salt
• 2 eggs
• 2 C buttermilk
• 1 medium jalapeno minced (optional)

Preparation

Step 1

preheat oven to 425.
put butter in 8 or 9" pan. place in oven till melted 3-4 minutes.
in bowl combine dry ingredients. in separate bowl combine buttermilk and eggs. remove pan from oven and pour butter in milk mix. use brush and brush remaining butter on sides of pan. stir in cornmeal mix to milk mix. put in hot pan.
