Ingredients
- 1 lb. red potatoes cut in 1-inch chunks
- 2 T. diced onions
- 4 T. butter, melted
- 2 T. honey
- 2 t. dry mustard
- salt and pepper to taste
Preparation
Step 1
Preheat oven to 375F. Lightly coat and 11x7 inch baking dish with nonstick cooking spray. Place potatoes in a single layer in dish and tip with onion. In a small bowl combine melted butter, honey, mustard and salt and pepper; drizzle over potatoes and onion. Mix throughly to coat all potatoes. Bake for 40 minutes or until tender, stirring several times during cooking. If you want them extra crispy outside, put under broiler for 1-2 minutes. Recipe can be doubled easily.
