Ingredients
- 1/4 c chopped dried apricots
- 1/4 c chopped roasted almonds
- 1/4 c torn mint
- 2 T EVOO
- 1 lb halved bocconcini (small balls of fresh mozzarella)
- Salt
- Pepper
Preparation
Step 1
1. Combine apricots, almonds, mint, EVOO, salt, & pepper.
2. Fold in bocconcini.
