Corn Chowder

Ingredients

  • 1 pound potatoes -- peeled and cubed
  • 1 medium onion -- diced
  • 1 large green pepper -- cored and diced
  • 1 large red pepper -- cored and diced
  • 2 cups corn
  • 4 scallion -- thinly sliced
  • 2 cups milk
  • 1/2 cup heavy cream
  • 2 teaspoons salt
  • pepper -- to taste
  • 2 tablespoons Italian parsley -- chopped
  • 2 medium celery stalks -- diced

Preparation

Step 1

In a saucepan, bring the potatoes, oonion, peppers and one cup of water to
a boil. Cover, lower the heat, and simmer for 10 minutes.

Stir in the corn, scallions, celery, milk, and cream and bring to just
under a boil. Turn down heat and immer for 10 minutes, stirring to avoid
scorching. stir in remaining ingredients and serve immediately.
