Potato Asiago Muffins

Ingredients

  • 1 3/4 C all-purpose flour
  • 1 T sugar
  • 1 T baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 2 large eggs
  • 3/4 C mashed potatoes
  • 1 1/4 C buttermilk
  • 2 T butter, melted
  • 1 T chopped fresh dill (or 3/4 tsp dill weed)
  • 1/2 C grated Asiago cheese

Preparation

Step 1

Measure first 6 ingredients into large bowl. Stir. Make a well in centre.

Beat remaining 6 ingredients with whisk in medoum bowl. Add to well. Stir until just moistened. Fill 12 greased muffin cups 3/4 full. Bake in 375F oven for 20-22 minutes until wooden pick inserted in centre of muffin comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool.
