Ingredients
- 1 T olive oil
- 1 med. chopped onion
- 2 T chili powder
- 1 C veggie broth/water
- 10 oz peeled, cubed sweet potato
- 16 oz Mexican style stewed tomatoes
- 1 can pinto beans, drained, rinsed well
- 3 T to 1/4 C chopped fresh cilantro
- 1 1/2 tsp grated orange peel (essential)
Preparation
Step 1
Heat oil, add onion and saute till tender, add chili powder, broth and potato. Cover, reduce heat and simmer till potato is tender, about 10 minutes. Add tomatoes with juice and pinto beans (rinsed canned beans at least 1 full minuter under running water). Simmer uncovered about 10 minutes. Add cilantro, orange peel and serve
