Sweet Potato-Pecan Burgers with Carmelized Onions

Ingredients

  • Onions:
  • 1 tsp canola oil
  • 3 cups sliced onion
  • 2 tbsp basalmic vinegar
  • 1 tsp sugar
  • 1/8 tsp salt
  • Burgers:
  • 2 1/2 cups 1/2" cubed peeled sweet potato
  • cooking spray
  • 2 1/2 cups chopped onion
  • 3 garlic cloves
  • 1 cup regular oats
  • 1 1/2 tsp ground cumin
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 chopped pecans, toasted
  • 1 tbsp canola oil, divided
  • lettuce leaves
  • 6 buns

Preparation

Step 1

Onions:
Heat 1 tsp oil in lg skillet over med-high heat, add sliced onion to pan, saute 12 min or until browned, stirring occ. Stir in vinegar, sugar and 1/8 tsp salt, cook 30 sec or until vinegar is absorbed. Remove mix from pan, keep warm, wipe pan dry with paper towel.
Burgers:
Place potato in lg saucepan, cover with water, bring to boil, reduce heat, simmer 15 min until tender, drain.
Heat lg skillet over med-high heat, coat pan with spray, add chopped onion & garlic, saute 5 min until tender. Place potato, chopped onion mix, oats, cumin, 3/4 tsp salt and pepper in food processor, process until smooth. Add in pecans, divide mix into 6 patties. Wipe pan with paper towel to dry, heat 1 1/2 tsp oil over med-high heat, add 3 patties to pan, cook 4 min until browned, turn over, cook 3 min more, repeat.
