Ingredients
- 1/2 cup plus 2 tbsp veg oil
- 8 cloves garlic, thinly sliced
- 2 15.5oz cans cannellini beans, drained
- 1/3 cup chicken broth
- salt
- 12- 6 inch corn tortillas
- 2 cups salsa verde
- 1 1/2 cups shredded pepper jack cheese
Preparation
Step 1
Preheat oven to 375. In med saucepan, heat 2 tbsp oil over med heat, add garlic, cook, stirring until golden, 2 min. Stir in beans, cook 1 min, stir in chicken broth, season with salt and cook, mashing beans until softened, 7 min, let cool slightly. Meanwhile, line baking sheet with paper towels, in small skillet heat remaining 1/2 cup oil. Fry each tortilla for 3 seconds each side, then drain on sheet. Place 1/4 cup mashed beans on 1 tortilla, roll up to close, transfer to oiled 9x13 baking dish, repeat, pour salsa over, sprinkle with cheese, bake until cheese is melted, 20 min....
