Ingredients
- 1/3 cup pesto
- 2 tbsp olive oil
- 4 oz soft goat cheese, crumbled
- 1 lb penne pasta
- 12 oz green beans, cut into 1 inch pieces
- salt
- 1/2 cup grated parm cheese
- ground pepper
Preparation
Step 1
Bring at least 4 quarts of water to a boil in large pot. Whisk tog pesto and olive oil in lg bowl, stir in goat cheese. Add penne, green beans and salt to taste to boiling water. Cook, stirring occasionally until pasta is al dente, scoop out 1/2 cup of the cooking water, set aside, drain pasta and add to bowl with sauce, toss well, adding some of hot pasta water to thin sauce, add grated cheese and black pepper to taste, toss again...
