Olive Garden's Chicken & Gnocchi Soup (copycat)

Ingredients

  • 1 tbsp Olive oil
  • 4 tbsp butter
  • 4 tbsp flour
  • 1 quart half & half
  • 1/2 cup celery, finely diced
  • 1 small onion, finely diced
  • 2 minced garlic cloves
  • 32 oz. chicken broth (if you like really thick soup, use about 20 oz)
  • 1 cup carrots, finely shredded
  • 2 cups chicken breast, cooked & diced
  • 1 package gnocci, cut in half & cooked according to package directions
  • (these can be found in the pasta section of the store)
  • 1 cup of fresh spinach, coarsely chopped
  • 3/4 tsp salt
  • 3/4 tsp poultry seasoning
  • 1 tsp parsley
  • 1 package of chicken flavor booster seasoning
  • (found near the chicken broth)

Preparation

Step 1

Saute the onion, celery and garlic in the butter & oil over medium heat until the onions become translucent.

Add the flour and make a roux. Let the butter & flour mixture cook for about a minute before adding the half and half. Once the mixture thickens, add in the chicken broth and allow to cook for about a minute before adding in the cooked gnocci, carrots, chicken, spinach & seasonsings; simmer until desired consistency.
