Ingredients
- 1 tbsp Olive oil
- 4 tbsp butter
- 4 tbsp flour
- 1 quart half & half
- 1/2 cup celery, finely diced
- 1 small onion, finely diced
- 2 minced garlic cloves
- 32 oz. chicken broth (if you like really thick soup, use about 20 oz)
- 1 cup carrots, finely shredded
- 2 cups chicken breast, cooked & diced
- 1 package gnocci, cut in half & cooked according to package directions
- (these can be found in the pasta section of the store)
- 1 cup of fresh spinach, coarsely chopped
- 3/4 tsp salt
- 3/4 tsp poultry seasoning
- 1 tsp parsley
- 1 package of chicken flavor booster seasoning
- (found near the chicken broth)
Preparation
Step 1
Saute the onion, celery and garlic in the butter & oil over medium heat until the onions become translucent.
Add the flour and make a roux. Let the butter & flour mixture cook for about a minute before adding the half and half. Once the mixture thickens, add in the chicken broth and allow to cook for about a minute before adding in the cooked gnocci, carrots, chicken, spinach & seasonsings; simmer until desired consistency.
