Penne a la Vodka

Ingredients

  • 1 lb penne pasta
  • 1 c. Turtorosa crushed tomatoes
  • 2 Tbls butter
  • 1 small onion, chopped
  • 1 pt heavy cream
  • 1/4 c. vodka
  • 1 tsp crushed red pepper
  • optional: 1 c. cooked shrimp or 1/2 lb chicken breast, cooked and cut into pieces

Preparation

Step 1

Prepare penne as directed.
In a large saute pan, melt butter and add onion; saute until onion is clear. Pour in tomatoes and cook for @ 15 min, adding salt and black pepper. Add cream,vodka and crushed red pepper (and optional shrimp/chicken), cook over low heat for @ 5 min. Toss with penne and serve with grated parmesan.
