Angel Pineapple Cake

Ingredients

  • Note:
  • 1 can (20 oz.) crushed Pineapple in Juice, undrained
  • 1 (1.5 oz.) Jello Vanilla Flavor Instant Pudding, Fat Free, Sugar Free
  • 1 C. thawed COOL WHIP FREE Whipped Topping
  • 1 Round Angel Food Cake , cut horizontally into 2 layers
  • 10 fresh Strawberries, (you can substitute other fruits like Blueberries, Kiwi (sliced), Mandarin Oranges (drained) or some other fruit you like.)
  • If calories are not a major concern, use regular Pudding and try adding a half cup of Cream Cheese to the recipe (after the Pudding and before the Cool Whip.)

Preparation

Step 1

Mix Pineapple with juice and dry pudding in med. bowl. With whisk whip until well blended.
Stir in COOL WHIP.
Place first layer of Angel Food Cake on a plate and spread topping on it. Add next layer and top with the Pudding mixture as well.
Refrigerate for 1 hour before serving.
Just before serving add the Strawberries to the top of the Cake.
