Ingredients
- 1/4 cup rice wine vinegar
- 1 Tbs. sugar
- 1 tsp. salt
- 2 seedless cucumbers, halved lengthwise, cut into 3" wedges
- 1/2 small red onion, chopped
- 1/2 cup chopped fresh mint
- 1/4 cup roasted peanuts
Preparation
Step 1
In a large bowl, whisk together rice wine vinegar, sugar and salt. Add wedges of seedless cucumber, chopped red onions and chopped fresh mint.; gently toss ingredients well and make sure to coat everything evenly.
Sprinkle cucumber salad with chopped, roasted peanuts. Serve at room temperature or chill. Add reduced-fat sour cream to the cucumber salad recipe for a tasty side dish or as a topping for lamb dishes.
