Cornbread Stuffing With Sausage and Apples

Ingredients

  • 1/2 lb Bulk Sausage, pork
  • 1 cup Onions, diced small
  • 1 cup Celery, diced small
  • 2 Tbs Unsalted Butter
  • 1 tsp Dried Sage, chopped
  • 1 tsp Dried Rosemary, chopped
  • 1 tsp Dried Thyme, chopped
  • 3 cups Cornbread, crumbled
  • 3 cups White Bread, cubed and dried
  • 1 cup Chicken Broth
  • 1 large Apple, cored, peeled and diced
  • 2 Tbs Fresh Parsley, chopped
  • 1 tsp poultry seasoning
  • 1 tsp Kosher Salt
  • 1/2 tsp ground black pepper
  • 1 cup Red Bell Pepper, chopped
  • 1/2 cup Golden Raisins, optional
  • Basic Cornbread

Preparation

Step 1

1. Saute sausage until brown. Remove from pan and place in a large mixing bowl.
Saute onions and celery in butter.
Add sage, rosemary and thyme.
When the mixture is softened, about 3 minutes, put into bowl with sausage. Add the remaining ingredients to the mixing bowl.
If mixture is too dry add more stock.
