Ingredients
- 1 cup Wegmans Panko White Bread Crumbs
- 1 Tbsp Wegmans Basting Oil
- 2 pkgs (about 1 lb each) Wegmans Organic Frenched Rack of Lamb
- Salt and pepper
- 6 Tbsp Italian Classics Basil Pesto Sauce (Grocery Dept), divided
Preparation
Step 1
1.Preheat oven to 450 degrees. Combine panko and basting oil in shallow dish; set aside.
2.Season lamb racks with salt and pepper; coat each evenly with 3 Tbsp pesto. One at a time, press lamb racks evenly into panko mixture to coat.
3.Roast on baking sheet until about 5 degrees less than desired doneness (about 20 min for medium). Refer to temperature chart for final cooking times (check internal temp by inserting thermometer halfway into thickest part of lamb, away from bone).
4.Transfer lamb to clean platter; let rest 10 min before slicing. Serve with additional pesto, if desired.
