Chicken Pesto Pasta (Paula Deen)

Ingredients

  • 16 oz fettuccine or angel hair pasta
  • 1 lb fresh chicken tenderloins
  • 1/2 t salt
  • 1/2 t ground black pepper
  • 1 T EVOO
  • 1 sm onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow squash, halved lengthwise & thinly sliced
  • 1 zucchini, halved lengthwise & thinly sliced
  • 2 c heavy whipping cream
  • 1/4 c prepared pesto

Preparation

Step 1

Can cook pasta in advance & simmer in sauce until heated through. Prepare pasta according to pkg directions & keep warm. Sprinkle chicken with salt & pepper.

In lg skillet, heat oil over med heat. Add chicken & cook 2-3 min per side until golden brown. Remove from skillet & cut into 1/2 in. pieces. Add onion & pepper to skillet & cook over med heat 3-4 min or just until tender. Add squash & zucchini & cook 3-4 min or just until tender.

Stir in cream & pesto & cook 5 min until slightly thickened. Add pasta & chicken tossing gently to coat. Serve immediately.
